Life 97 Days After My Whole30

Monday, May 9, 2016. Whole30 plus 97 days of Clean Eating.  Mostly.

Let’s see what today brings…

4:15 AM.  Alarm.  Awake.  2 cups of black coffee.

5:45 AM.  Breakfast.  Ground beef hash with white and yellow sweet potatoes mixed in; a cup of veggie mix: summer squash and zucchini, red and green peppers, and mushrooms, all scrambled together with one cup of egg whites.  I also had a half teaspoon of local bee pollen.

I made a big travel mug of green tea this morning.  I have 3 stops to make before I get to my office.  Hopefully that will last.

Whole30 / Clean Eating observation:  It is absolutely amazing to me how just 1 day of going rogue (yesterday) can make you feel like crap the next day.  Seriously.  I’ve learned over the past few months how sugar bad carbs bad fat etc. affect me.  This morning I wake up and I’m moving kind of slow, muscles hurt a little and the joints are a little achy, and I totally space out during sports center and the news.  Three hours after breakfast I am totally starving to death and drinking 16 oz of water did not help curb my appetite.  I tore through my carrots and celery, and immediately moved on to my lunch.  Then, around 2 this afternoon, I’m chugging more water and eating my apple slices.  So my effect from bad food is the sudden onslaught of hunger between meals, but on the next day.  But I’m drinking more water, which is nice.

10:00 AM.  Lunch.  A big green salad with half an avocado and a sliced up Aidells Chicken and Apple sausage sitting on top.  Tasty.

2:00 PM.  Apple slices and a travel mug full of water.  I wrote about this up there ⇑⇑⇑ somewhere.

4:00 PM.  Snack.  Homemade trail mix.

6:30 PM.  Dinner.  Flank steak, potatoes cooked in the Tfal ActiFry, and corn on the cob with organic grass-fed butter.  Is it summer yet?

Whole 30 Observations Day 35

Day 35.  February 7, 2016.  STEP TWO: REINTRODUCTION Day 5

4:15 AM.  Nature calls, and I answer that call.  Back to bed.

7:00 AM.  Up and at ’em!  2 cups of black coffee before during and after breakfast. 3 eggs over easy, plain cottage style potatoes and 2 strips of bacon from US Wellness.

Jane is out the door early today to volunteer with C5 at the Heaven Can Wait spay/neuter clinic.  She’ll probably pull a solid 8, so I’ll try not to trash this place (too much) while she’s out.  I got plans, me…

Whole30 Observation:  I usually like my bacon on the crispy side.  My personal recommendation on US Wellness bacon is it’s a lot better when it’s not pushed past the done-ness limits, so don’t overcook the bacon!  Thumbs-up on this product, btw.  Since I’m doing shameless product endorsements, let me say that the Organic White Tea from Prince of Peace is really, really good!  My recommendation, since you didn’t ask, is to brew it strong for your morning beverage.

Whole30 Observation 2:  I don’t seem to be affected at all as far as reintroducing non-gluten grains yesterday – oats, corn and rice.

Breakfast looked a little something like this firt picture:

I reserved the bacon grease so I could use it to grease up the muffin pan when I made my mini frittatas today.  The bacon grease worked better than coconut oil for the whole ‘non-stick’ action, but it wasn’t perfect.  Next time I’m going to use the solidified bacon fat and grease them cups up with that.  Trial and error, I suppose.

This Minis 2_7_16week, I took my Ortega peppers (canned) and warmed them in a non-stick pan in order to get rid of some of the moisture.  I also threw in my red peppers to get the same effect.  Last week they came out pretty ‘watery’.  They were still delicious, but there was definitely room for improvement.  Anyway, mini egg cup frittata dudes are 50% whole eggs, 50% original All Whites egg whites, bacon that I mentioned before, red peppers and Ortega peppers.

Lunch 2_7_161:00 PM.  Lunch.  Green salad and a couple of Aidells Chicken and Apple Sausages.  If you haven’t tried Aidells, you should.  They’ve been one of my favorites since starting the Whole30.

We’re doing major Chicken Wings for Super Bowl viewing.  I’ve posted about this before, and I’m still stoked that we can do these Whole30 compliant with just some very minor changes.Wings 2_7_16

Rinse the wings, pat dry and coat with potato starch, bake for 1 hour at 450°, turning half way through.  For the sauce, warm up some Frank’s RedHot with a little bit of ghee added and give them a spin.  We served ours with homemade compliant ranch dressing for the dipping sauce.  Carrots and celery on the side, of course.  We also had compliant avocado devilled eggs to go with them.

Jane has been waiting until today to do day 1 of her slow your roll reintroduction.  With beer.  She’s going with a nice Longboarder Island Lager.  Hawaiians call Las Vegas “The Ninth Island”.  Google it.  But I digress…  Just found out Jane’s group took care of 182 cats today.  Good job! 3 beers and she’s done, btw…

9:00 PM.  Bedtime.  Monday tomorrow. yay.

Whole 30 Observations Day 34

Day 34.  February 6, 2016.  STEP TWO: REINTRODUCTION Day 4

5:45 AM.  Nice to sleep in!  2 cups of black coffee.

Whole30 Observation and ReintroductionYesterday I was kind of on the fence about a couple of things, but I finally decided that today I will reintroduce non-gluten grains.  I’ve had some oats, I’m thinking rice with lunch and corn with dinner.  Jane and I did buy some Teff yesterday, so Jane has been all over Pinterest looking for some good Teff recipes.  Pinterest (pronounced pin-trest and not pin-ter-est, I stand corrected and I digress simultaneously.  Multi-tasking.  Sweet!  wherewasI?)  More on the Teff later, I guess…  Jane is still on the slow-roll for reintroduction.

12:00 PM.  Back home after a major grocery haul.  Feeling OK (so far) from the oatmeal this morning.  Had an Apple Pie Lärabar for a snack on the drive back home.  Pretty tasty but kinda $$$ when they are not on sale.

12:30 PM.  Lunch.  Had a leftover roasted chicken leg-thigh piece with some corn.  Gotta love some non-gluten grains.  Normally, I really like corn, but the combination of 1.  Anticipation, and 2.  This particular brand and style kind of left me with a “meh” attitude towards the corn.  Lots of pepper, almost went for the hot sauce.  Chicken was good, though:

Next adventure:  Off to WinCo.  This place has all kinds of hidden gems.  Bulk bins are always cool.  Also got a lead from their website on a couple of deli-type items that may be compliant.  We shall see…

4:00 PM.  Back home.  Said deli items were a total bust.  I’m not mad, though.  We were going there anyway.

So the inside not necessarily ‘joke’ about Whole30 is spending your weekends shopping for or prepping meals.  So Jane, who is capable of multi-tasking, is making ground beef hash for the coming weeks breakfast, and assembling kebabs for dinner. I, on the other hand, am making Pico de Gallo for the coming week:

So here’s the hot tip if you’re reintroducing non-gluten grains, and you like chips and salsa – check out Tostitos Simply Organic Blue Corn Tortilla Chips.  And by the way, the chips are pretty big, so eat responsibly and in moderation, please.  Also, before you do, go to Whole30 101: The Official Whole30 Glossary and re-read the definition of “Food With No Brakes”.  We don’t need to get caught-up in that trap again!

6:30 PM.  Dinner.  Chicken kebabs and beef kebabs with chimichurri.  Mine was served over a bed of rice, Jane had riced cauliflower with hers:

Needless to say, it was delicious!  I also got reprimanded for going a little crazy with the chimichurri, so I’m not allowed to have any more with the leftovers.  We’ll see about that…

Whole30 Observation:  So far, it doesn’t seem like the oats, corn or corn chips, or rice have bothered me.  There’s always tomorrow and the day after to see if there’s any effect.

Ended up having a little dessert.  4 dates halves with almond butter and a couple halves with coconut manna.  And a double-shot of espresso to wash it down.

PM.  Bed.  Bedtime is kind of up in the air tonight.  Our son has a school event tonight – the kids call it “Sadies”.  Back in the day we called it “Sadie Hawkins” or the “Backwards Dance” – the girl asks the boy to the dance.  Anyway, I get to retrieve him after the shindig.  Jane is up super early to volunteer with C5 at the Heaven Can Wait clinic.  There will be (an estimated) 100 patients tomorrow.
