Tuesday, March 15, 2016. Whole30 plus 42 days of Clean Eating. Mostly.
Let’s see what today brings…
4:15 AM. Alarm. 2 cups of black coffee.
5:45 AM. Breakfast. My mouth is still jacked-up from getting that temporary crown fitted yesterday, so I have to make some chewing adjustments. I had about a half portion (hard to tell by the pic) of my white and yellow sweet potato and ground beef hash; veggies – summer squash, zucchini, red and green bell peppers, mushrooms and spinach scrambled in with a 1/2 cup of egg whites, I had to skip my bacon this morning (sad face), and I did have some bee pollen. I skipped the avocado again.
For the second time this work-week, I made myself a giant mug of white tea for the morning sipping session. My favorite travel mug may be retiring to the landfill soon. It’s like drinking from one of those trick dribble glasses sometimes.
11:00 AM. Lunch. Moroccan stew with cauliflower rice, and a garden salad. This stew was supposed to be my dinner last night. Glad I had it for lunch today – it’s absolutely delicious.
Whole30 Observation: If you told me, or anybody who knows me, 3 months ago that I would be eating cauliflower – AND LIKING IT – I (and everybody else) would have just laughed at you. I have never in my life liked cooked cauliflower in any way, shape or form. Including smothered in cheese. Cooked cauliflower has always been up there on my gag list, second only to Brussels Sprouts. Now there’s some horrible tiny cabbages of sulphuric death, those sprouts. blechhh.
7:oo PM. Dinner. Moroccan stew with cauliflower rice. Déjà vu. Still delicious. The carrots were a nice addition.
Whole30 Observation: This doesn’t necessarily apply to only Whole30, but food in general – This stew was better tonight after it was in the fridge longer. Same with spaghetti sauce, chili, chicken soup, all kinds of things. They’re always better the next day.
9:00 PM. Projected bed time.
And so goes Step Four: Life After Your Whole30… All in all I would say it was a good day.
