Day 36. February 8, 2016. STEP TWO: REINTRODUCTION Day 6
4:15 AM. The alarm beckons. Monday. I ain’t afraid! 2 cups of black coffee.
5:45 AM. Breakfast. 3 mini frittatas filled with bacon, red and Ortega peppers, and topped with fresh Pico de Gallo; ground beef hash and half an avocado. Brewed up some white tea, extra strong, to bring with me to work.
Whole30 Observation: The non-gluten grain reintroduction had no effect at all on me. Jane, however, woke-up with a little bit of a headache this morning. I’m not saying the headache was from the beer she enjoyed yesterday, though. We’ll see how she’s feeling later… Update: It’s never the beers fault!
11:00 AM. Lunch. A nice garden salad with avocado, and a side of tuna mixed with homemade mayo.
4:00 PM. Home. Ate my apples and had a Caffé Americano.
5:30 PM. Dinner. Had Tandoori Chicken (boneless skinless thighs) served over curry cauliflower pineapple rice. This is another dish that you can serve anytime, Whole30 or not. It’s definitely one of my favorites.
Whole30 Observation, and this may be the most totally random digression to date: The weather here in Las Vegas has been really mild, to say the least. So with all of the fruits and veggies we’ve been eating for the last 5 weeks, our dual chamber compost bin is pretty full. I was looking at the bins after work today, and our little ecosystem is flourishing. Like I said, pretty random, but the scraps are going to a good use.
Whole30 Observation: Tomorrow (Day 37) I will be reintroducing Dairy. It will also be the first time since we started the Whole30 that I will knowingly and willingly be consuming a SUGAR ADDED product as well. Tune in tomorrow…I’ll try to have the blog written and published by 9:00 PM PST. Which typically is my designated bedtime.
