Day 28. January 31, 2016. “Day 28: 28 is as good as 30…right?”
6:30 AM. I can’t believe I slept this late! Woke up with a slight headache. I’m blaming the weather change which leads to mild sinus issues with me. Two cups of black coffee.
8:00 AM. Breakfast. I’m going with a bacon and potato scramble:
After breakfast, I started working on my mini frittatas that I will be having with my breakfast Monday through Thursday. Friday will probably be an ‘over-easy’ day. Frittatas are green pepper, red pepper, Ortega (Anaheim) peppers, and some of that bacon I was talking about. I use 6 real eggs plus 1 1/2 cups of Egg Beaters all natural:
Jane is working on the hash for next week’s breakfasts. Ground beef, white potatoes, sweet potatoes, red peppers and green peppers. This smells (and tastes) so good:
1:00 PM. Lunch. Just got back from doing some running around, and it’s raining. T-shirt weather yesterday. Winter in Las Vegas, I guess. Albondigas is in order. So glad I made a lot of this. The broth is thickening more due to the potatoes beginning to fall apart:
“Day 28: 28 is as good as 30…right?” So here’s a Whole30 Observation – Really? You’d go this far just to cut the last corner? Come on! We’re one week past Day 21, the Interlude, and seriously, tomorrow and the next day ain’t nothin’! Put on your (old) big-girl britches and suck it up, buttercup! Two days. Sheesh!
5:30 PM. Dinner. Smothered pork chops, mashed potatoes made with chicken stock, and green beans. The gravy is chicken stock thickened with arrowroot. This dinner is always a hit! Feast your eyes:
9:00 PM. Designated bed time. Early start to a full week that includes another appointment with the Tax Man on Monday, Jury Duty on Thursday, and a Doctor’s appointment on Friday.
