Whole30 Observations Day 22

Day 22.  January 25, 2016.  “Tiger Blood” post 7

4:00 AM.  Awake before the alarm.  Again.  2 cups of black coffee.  My Whole30 adventure continues…

5:45 AM.  Breakfast of Champions.  3 mini frittatas which included baked prosciutto for this week, ground beef hash and 1/2 an avocado.  There’s some pico de gallo that was supposed to be on top of the eggs, but it kind of went everywhere.  Come on.  It’s early.  Of course I made a travel mug full of green tea for the drive to work.


11:00 AM.  Lunch.  Green salad with avocado and chicken.  Absolutely delicious!  Back to the part about the chicken – Jane pressure cooked a whole chicken on Saturday.  The stock is being saved for albondigas, I’ll have the dark meat on my salads, and Jane will have the breasts with 2 of her lunches.IMG_1407[1]

4:00 PM.  Tore through my apples on the drive home, but didn’t touch my carrots and celery today.   Back home.  Time to pull a double shot of espresso.  I haven’t been trying to imitate a latte or cappuccino or flat white or what have you for the past week or so.  Almond milk in coffee is OK, coconut milk – not so much.  Black coffee is just fine and so is espresso!

6:00 PM.  Time for dinner.  I’m going with the leftover Thai chicken meatballs and sauce over a bed of cauliflower rice, and a side of the Thai zucchini zoodle salad.  Like I said yesterday, this is some really good stuff!!!  Check it out:


You could put this Thai sauce on an old shoe and you would eat that shoe.  It’s that good!

9:00.  Bed.  Another early start tomorrow.
