Day 21. January 24, 2016. “Tiger Blood” post 6
4:30 AM. Seriously, what is wrong with this cat? Stupid Moggy (cat) is laying down on my pillow, making biscuits on my head, and talking up a storm. So now I’m hoping I can get back to sleep after I *ahem* “re-adjust” the cat.
6:30 AM. Better than 4:30 AM, I guess… 2 cups of black coffee while watching the news.
8:00 AM. Hunger mode. I made another 3 egg frittata with ground beef hash and topped with pico de gallo (salsa fresca), and of course, I made a huge travel mug of white tea to drink with breakfast and sip on for a couple of hours. No breakfast is complete without a photo:
Another hit! Jane’s ground beef hash: white potatoes, sweet potatoes, red and green peppers, white onion, cayenne and chili powder, and ground beef. She makes a ton of this on the weekend and we (me, mostly) eat it all week long with breakfast.
1:00 PM. Time for lunch. I have always had a problem with leftovers – I’ve never really been that big of a fan. However, with the Whole30 program and having little meals already portioned out, I can grab a container, throw it in the microwave, and viola! lunch is served. Leftover smothered pork chop, mashed potatoes and green been bento (I know it’s Tupperware and not really a bento):
3:00 PM. Dinner guests arrive. Appetizers – Deviled Eggs made with home made avocado oil mayo. Some of the deviled eggs are topped with baked Prosciutto, and some have Jalapenos mixed in and I forgot to top them with Cayenne pepper. They still had a little bit of a kick. Huevos Diablos. By the way, the compliant prosciutto is Citterio Brand All Natural Prosciutto di Parma from Costco. We also have appetizers that are cantaloupe wrapped with prosciutto.
Main course. Side salad is Thai zucchini noodle (zoodle) salad. Our son won a Dash Go Rapid Peeler, so it’s come in handy a couple of times. Main course is Thai chicken meatballs in sauce served over cauliflower rice. One of my personal Whole30 favorites so far! Everybody raved about how good it was. This is diet food?!?!
Dessert is a 100% non compliant Funfetti No Bake Cheesecake (complete with birthday cake Oreo crust) for the birthday girls. Jane froze the leftover cake so we could have some after we re-introduce grain, dairy and sugar into our diet. I’m hoping before the end of February, maybe?
9:00 PM. Bed. Early start tomorrow to a busy week.
